21 Day Fix Results (so far)

March 17, 2015 was the beginning of my journey to getting fit and healthy!  The first round I did have a few slip ups, but I didn’t give up.

I am loving that this program is so easy for a busy homeschooling momma to 5 can stick to it!

The first day of the workouts was brutal!  I was so unfit and out of shape.  I didn’t give up! The initial soreness from day 1 eventually went away.  Each week I was getting stronger!

After a few weeks I didn’t need to follow the modified version! These results are from 2 rounds of the 21 day fix (42 days).  Today I just started the 21 Day Fix Extreme and I can not wait to share my results with you!

Grass-fed Beef or Turkey Chili

Today the kids have swimming lessons and we won’t get home until after 6:00. I will not let that stop me from staying on track.  While the baby was napping today I threw this together. Many people use ground turkey while following the 21 day fix extreme.  I have a freezer full of very lean grass-fed beef, so that is what I will be using.  Lean beef is approved on the 21 day fix.

When we get home tonight I just need to reheat the chili and enjoy.  I still have 1/2 blue to use for some shredded cheese on my chili tonight! Or maybe some avocado…hard decisions.

Grass-fed Beef or Turkey Chili
Makes 6 servings,  1 cup each

1 tsp. Olive oil
1 1/2 lbs lean grass-fed ground beef or 93% lean ground turkey
1 medium onion, chopped
1 medium green pepper, chopped
3 cloves garlic, finely chopped
1 1/2 tsp ground cumin
1 Tbps chili powder
1/2 tsp sea salt
1/4 tsp cayenne pepper (optional)
2 cans (15 oz) black, kidney or pinto beans
1 can (15 oz) all-natural diced tomatoes,  no sugar added
12 fresh cilantro sprigs (option)

1. Heat oil in large saucepan over medium-high heat.
2. Add ground meat, onion, bell pepper,  and garlic.; cook stirring occasionally.
3. Add cumin,  chili powder,  salt,  and cayenne pepper;  cook, stirring occasionally for 1 minute.
4. Add beans and tomatoes (with liquid). Bring to a boil.  Reduce heat to low; gently boil, stirring occasionally,  for 15 to 20 minutes,  or until thickened. 5. Serve warm, sprinkled with cilantro.

Today I made this in the Crockpot and it turned out great!  I plan to freeze the extras.  I will put it in ziplock bags and lay flat to freeze.

Banana Nut Steel Cut Overnight Oats

Have you seen the oatmeal made in a jar overnight?  I was hesitant to try them thinking they would be soggy and not sure I would like cold oatmeal.  I finally took the plunge! I am so glad that I did. It is a good healthy alternative to my eggs & veggies I was having every morning.  I have been enjoying playing with different fruits to change up the flavor.  I encourage you to add your own twist!

Banana Nut Steel Cut Overnight Oats serves 1
1/4 cup dry steel cut oats
1/4 cup almond milk
1 red container of greek yogurt (about 3/4 cup)
10 pecans chopped
1/2 banana sliced

Mix the oats, yogurt and milk in a jar. Put lid on an store in the refrigerator overnight.  In the morning stir and add the banana & nuts.

21 Day Fix: 1 red, 1 purple, 1 yellow & 1 blue

Egg Muffins

We all know that getting a healthy breakfast isn’t always as easy as it sounds whether you are a stay-at-home Mom or work outside the home. Grabbing something through the drive-thru is going to work against our healthy and fitness goals, for the most part.

If you are reading this you most likely are looking to make healthier choices for you and your family and starting the day off on the right foot with a delicious healthy meal will help you stay on track throughout the day.  These delicious egg muffins are not only quick, but versatile.  You can change up what you add to them for variety so you don’t get bored.  Experiment with different veggies and spices to see what your favorite combination is and share it here!

Egg Muffins  makes 3 servings

Mixed vegetables (I use onions and bell peppers) -3 green containers on the 21 Day Fix

6 eggs – 3 red containers on the 21 Day Fix

  1. Prep a cupcake pan (12 spots) with cooking spray. (I like to use parchment paper muffin liners_
  2. Preheat the oven to 350 degrees.
  3. Dice your choice of vegetables to fill 3 green containers (3 cups) – If using frozen veggies, measure, then cook them quickly to remove the excess liquid frozen veggies contain. You don’t want watery egg muffins. You can slightly cook down fresh veggies if you like them less crisp, too.
  4. Beat eggs in a bowl, season with black pepper and then mix in your vegetables.
  5. Pour the egg and vegetable mixture into your prepared baking pan.
  6. Bake at 350 for 15 minutes, or until eggs are cooked through.
  7. Store in the fridge and heat up in the microwave for about 30 – 60 seconds (depending on your microwave) when ready to eat.

On the 21 Day Fix program, each serving of 4 egg muffins equals 1 Red container and 1 Green container.

I like to make these into a complete meal by adding some fruit (purple container) or have them with a piece of whole grain toast or wrap (yellow container) and add some cheese (blue container).

I like to make these ahead of time and have ready in the fridge.  It works great for me in the mornings when the baby is fussy to just pop one in the microwave and I have a quick breakfast.  They are also perfect for the kids before school too!

Shopping List

We all know grocery shopping isn’t always that fun, but it is a job that needs to be done!  If you have a well organized shopping list it will help you to select food items to keep you on track towards your goals!  If you follow the 21 day fix program this shopping list is even color coded to match your containers!

Bacon Cheeseburgers

I love that it is starting to get warmer out so we can grill more! It is a struggle out here at out house because we get such strong winds! Last night it was perfect for some burgers on the grill!

Yesterday was shopping day and I usually just make some sort of salad. Well I think my husband was excited to have some “manly” food!

I used nitrate free bacon for the burgers. I know many people use turkey bacon but I just can’t!  We buy a half of grass-fed beef at a time so that is what I used.  We have 2 pound packages of beef. If you are only using 1 pound just adjust the other ingredients.  You can also use ground turkey or chicken.

Bacon Cheeseburgers  makes 8 burgers

2 pounds of ground beef,  chicken or turkey
2 tsp of seasoning salt
2 tsp of garlic powder
1 bunch of romaine lettuce leaves
2 tomatoes sliced
Onion sliced
Mushrooms sliced
8 slices of provolone cheese
Bacon
Coconut oil

Mix the burger & seasonings together.  Form into 8 patties. I have a burger press and LOVE it! I cook the bacon in the oven on a rack at 400 degrees for about 20 minutes. Grill the burgers.  I baked a sweet potato for my yellow container.  Once the burgers were done topped then with a piece of bacon, a slice of cheese and the onions and mushrooms.

I still needed 2 yellows,  a red & 2 greens at dinner.  I had 2 lettuce leaves & 2 tomato slices for 1 green & the mushrooms and onions for the other. I measured 1 green container of each mushrooms and onions raw…they tend to shrink down when sautéed. I sautéed the mushrooms and onions in 2 tsp of coconut oil.

21 Day Fix: 1 serving is 1 burger with 1 piece of bacon & 1 slice of cheese. Topped with the mushrooms and onions the 2 green containers cook down to 1 along with the 2 lettuce leaves & 2 slices of tomato. 1 red, 2 green, and 2 yellow (I measured out my sweet potato in my container.) 2tsp, 1 blue
