Meal Planning Week of 8/3 to 8/9

I know meal planning can be a struggle if you have never done it before.  I started planning out my menu and grocery shopping list when the twins were babies.  I am not super strict to keeping each meal on the day I have listed it, but I at least know what items I have in the fridge or pantry to make meals with.  Plus it helps to keep the grocery bill down by only going to the grocery store once a week. (I use to go shopping every 2 weeks, but I found produce would not stay good that long.)

When I sat down to start planning this week, I grabbed my new Fixate cookbook!  I have to say every recipe I have tried so far is SOOO good!  The kids and the husband all love them!  So if you haven’t ordered your book yet,  STOP what you are doing right now and order it here!

As you can tell, I have tagged away at my book!  I like to flag the pages of what I am going to make for the week.  Many of the recipes I am making this week are from the book and due to copyright I can not share the recipes.

I pulled out the Weeklymenu21dayfix and divided each day up into Breakfast, Snack, Lunch, Snack, Dinner, Snack.  I know not everyone eats 6 times a day, but I feel my best when I spread all my containers out over 6 meals per day.  I encourage you to play around with the number of meals you have a day and track how you feel.

We are a family of 7!  The 2 youngest don’t eat much…well the baby is still nursing, but I will be introducing good soon.  And our 20 month old is pretty picky, so she doesn’t eat much either.  My husband is a firefighter and I need to send meals with him to work, so many dinners I try to double or triple so I can have some for lunch the next day and he can takes some to work.

Shakeology  I have my Shakeology once a day.  Usually after my workouts!  I like to add 1 green of kale/spinach & 1 purple of fruit…maybe 1/2 banana or some berries.

Best Cookbook EVER!

Today I was like a kid at Christmas!  I knew my Fixate cookbook was going to be delivered today,  but I wasn’t sure when. I will admit that I sort of stalled getting my workout started just in case it showed up. I finally pushed play and knocked out Lower Fix & quickly took shower afterwards.  The moment had arrived when I was fixing my Shakeology!  The kids saw the mail man leave a package in the mailbox.  Eekkk! I could hardly wait!  I had one of the twins ride her bike to the mailbox since it was the fastest mode of transportation for her! Let me tell you…I didn’t waste anytime opening up that beautiful box from Beachbody! 

Hmm…now that I had this little gem in my hands the hardest part was deciding which mouth watering recipe to make first!  Trust me, when you get your copy you will understand!

I was trying to read through it while nursing this cute little guy!  Well, he kept trying to grab it. For now he will just get these amazing dishes second hand!  I have to say my milk supply has been superb while doing the 21 day fix! Soon enough he will be indulging in these healthy recipes.

Tonight I decided to try the Protein Waffles!  OMG!! If you are on the fence about ordering the cookbook,  it is so worth it for just these waffles!

Our 20 month old is an extremely picky eater! To the point she mainly eats oatmeal,  yogurt, cheese, milk, and peanut butter.  If I try giving her a new food she will throw it up! Well, thank you,  thank you,  thank you Autumn for these delicious waffles!  She ate two tonight!

Shrimp Egg Roll in a Bowl

The kids LOVE shrimp as much as I do!  I normally don’t buy it just because it isn’t that cheap and we tend to eat it all in one sitting.  Well, tonight was no exception!  I came up with the Shrimp Egg Roll in a Bowl recipe not sure how it would turn out.  My 3 testers all agreed it was AMAZING!!!  In fact, I was planning on having leftovers for lunch tomorrow, but that will not be happening.  All that is left is extra brown rice.  Next time I will have to double it!

Shrimp Egg Roll in a Bowl (adapted from Healthy Feels Happy)

  • 4 teaspoons vegetable oil
  • 1 inch grated fresh ginger
  • 2 cloves garlic, finely chopped
  • 2 scallions, sliced thinly
  • ½ cup carrot, cut into 1-inch julienne strips
  • ½ cup red pepper, cut into 1-inch julienne strips
  • 1 cup Napa cabbage, shredded
  • ¼ cup chicken broth
  • 2 tablespoons Coconut Aminos or low-sodium soy sauce
  • 1½ lbs. shrimp, cooked

DIRECTIONS

  1. In a wok or skillet, stir-fry the ginger and garlic in sesame oil until fragrant, about 30 seconds. Add scallions, carrots, and red pepper and stir-fry over high heat for 2 minutes.
  2. In a bowl, combine the chicken broth and coconut aminos.  Add the Napa cabbage and broth mixture. Bring to a boil and simmer 5 minutes, stirring occasionally, until the vegetables are soft.
  3. Cook the shrimp in a tsp on coconut oil.
  4. Add half of the sauce to the vegetable mix and half to the shrimp.

 Sauce

INGREDIENTS

  • ⅓ cup Coconut Aminos or low sodium soy sauce
  • ⅓ cup rice vinegar
  • 1 tablespoon honey
  • 1 to 2 teaspoons sesame oil
  • Pinch of red pepper flakes

DIRECTIONS
Combine all ingredients in a bowl.

I served it over brown rice.  It was so amazing!  I am looking forward to having this dinner again…with leftovers for lunch!

For those following the 21 day fix, for the container amounts I measured my brown rice in the yellow, the vegetables in the green, and shrimp in the red.

1 red, 1 green, 1 yellow, 2 tsp

Why did you start this journey to a healthier more fit you?  Maybe you have a wedding coming up, or class reunion.  Or perhaps you are going on your dream vacation.  But maybe your reason is like mine! I am the proud mother of 5 amazing children and I want to do the best that I can to be around for them. Coming from a family with cancer and heart disease I want to be proactive and do my best to prevent from becoming another family member with one of these diseases! 

If I said I didn’t want to look and feel better too I would be lying.  I want to be in the best shape of my life before turning 40 (that’s in 2 years).

Along with being healthier and looking good I am a role model for our children.  I want to teach them about having a healthy relationship with food and a healthy self image. 

I happened to find this dress on a Facebook for sale in my area. It was a steal of a deal and still had the tags on it! I can’t wait to see myself in it! My plan is wear it for our 8th anniversary in March!
