I love the smell of pumpkin treats baking on a Fall morning! This morning before the kids had to wake up to do the animal chores and get ready for school I was making them some healthy breakfast muffins! I say I was making them for the kids, because I only got a small bite out of the whole batch! So I would say these are a win!
Double Chocolate Chip Pumpkin Protein Muffins serves 6, 2 muffins each
1/4 cup canned pumpkin
1 large banana
1/2 cup natural peanut butter (or any nut butter)
1/4 cup honey
2 scoops of Shakeology (I used chocolate, but you could also use vanilla)
1/2 tsp baking powder
1/2 tsp pumpkin pie spice
1/4 tsp salt
6 tsp of semi-sweet chocolate chips, optional
Preheat oven to 350 Degrees. Prepare 12 muffin cups with non-stick spray or muffin paper liners. (I like to use the parchment paper ones). Mix eggs, pumpkin, banana, peanut butter, and honey together. Add baking powder, shakeology, pumpkin pie spice and salt. Mix well. Divide evenly in 12 muffins. Place 5 chocolate chips on each muffin. Bake for 18-20 minutes.
21 day fix: 2 muffins 1/2 red, 1/3 purple, 1 tsp, 1 yellow if you added chocolate chips
**Heating Shakeology will affect the superfoods in it. You could also use just a protein powder.
