My family loves granola! They will just eat it by the bowl…plain! If you buy it in the store, you know it isn’t cheap! Plus are you really sure what is in it? This recipe adapted from my Mother-in-law’s recipe. This weekend I made 4 batches! That would be a mighty high bill at the grocery store for all this granola! We like to have it on yogurt, ice cream, or with milk for breakfast. My daughter even used it as a topping for her Strawberry Pie she made this afternoon.
Coconut Chia Seed Granola
3/4 cup butter or coconut oil
1/2 cup honey
4 cups of rolled oats
3/4 cup chia seeds
1 cup shredded unsweetened coconut
1 Tbsp Cinnamon
3/4 cup sunflower seeds, optional
You can add dried fruit and nuts too after it has been cooked.
Preheat oven to 200 degrees. Melt the butter and honey together. Mix the oats, chia seeds and coconut, cinnamon, and sunflower seeds in a large bowl. Once the butter and honey are melted, pour over the oat mixture. Stir to coat evenly. Place on a pan lined with parchment paper. Place in the oven for 1 hour. Stirring every 15 minutes until golden brown. Store in an airtight container.
