21 Day Fix Egg Chile Bake


I am always looking for new breakfast ideas.  I would be happy eating either scrambled eggs or Overnight Steel-Cut Oats, but my husband likes to have variety.  Some of his favorites are not 21 day fix approved, so I have been trying to revamp some of those.  This turned out so good!  I have made it several times, but unfortunatley my husband can not have dairy anymore.  Not sure how to make it dairy-free.  If anyone has an idea, please leave a comment.  If you know you will have some busy mornings this week, why not bake this up and just reheat to eat!

21 Day Fix Egg Chile Bake, serves 4, 2 pieces each

10 eggs, beaten

2 cups 2% cottage cheese

2 -4 oz.cans green chiles

1 tsp. baking powder

1/2 cup whole wheat flour (I used gluten-free flour since we can’t have gluten)

1 1/4 cups shredded cheddar

Preheat oven to 350 degrees. In a medium bowl mix eggs and cottage cheese together well.  Add the flour, chiles, baking powder and stir.  Mix in the cheese.  Pour into a prepared 9×13 pan.  Bake for 40 minutes or until lightly browned on the edges and firm. Cut into 8 equal pieces.

21 day fix: 2 pieces 1 red, 1 blue. (I didn’t count the chiles since there isn’t much in each piece.  The flour doesn’t add much overall either, but if you want you could count as 1/2 yellow.)
