Last fall, a friend gave me five pie pumpkins from her garden. I roasted them up and froze the fresh pumpkin puree. Last week I was trying to figure out what to make the kids for breakfast that was on plan for me to eat as well. Meet the 21 day fix Pumpkin Pancakes! Our very picky 2 year old even loved them!
21 Day Fix Pumpkin Pancakes serves 1 (about 6 pancakes per serving)
2 eggs, separated
1/2 cup pumpkin puree
1/4 cup oat flour (you can make your own by blending old fashioned oats in a food processor or blender)
1/4 tsp. baking powder
1/2 tsp. cinnamon
1/8 tsp. nutmeg
1/8 tsp. ground ginger
Separate the eggs. Beat the eggs whites until stiff. In a small bowl combine the egg yolks, pumpkin puree, oat flour, baking powder, cinnamon, nutmeg, and ginger. Carefully fold in the egg whites. Heat a medium pan over medium, low heat. Spray your pan with cooking spray. Pour 1/4 cup of batter into the hot pan. Once there are small bubbles on the top, flip the pancakes. Makes 6 small pancakes.
These are great! If you add toppings be sure to add to your container count.
